How to Read This Menu

Fifty-nine items is a lot to scan when a server is standing there. Here is what the numbers above actually tell you once you line them up, which is something the menu itself never does.

The Calorie Range Is Wider Than the Price Range

Prices on this menu roughly triple from the cheapest entrée to the most expensive. Calories vary by nearly twenty times. Iced tea is 80. Family Sized Ribs is 4,020.

That gap matters because price is printed on the menu and calories usually are not. Two dinners costing within a few dollars of each other can differ by 700 calories.

Three Things Worth Knowing Before You Order

Grilled beats fried by more than size does. Grilled BBQ Chicken is 420 calories. Country Fried Chicken is 780. Same bird, 360 apart. Meanwhile a 23oz Porterhouse is 750, which is less than the fried chicken despite weighing far more. Preparation method outweighs portion size on this menu.

The lightest steak is also the cheapest. The 6oz Hand-Cut Sirloin at $16.99 and 420 calories is the lowest-calorie steak and the lowest-priced. That combination almost never happens on a menu. It is the default recommendation for most people.

Grilled salmon is not the light option. At 580 calories it sits above the sirloin, the Dallas Filet, and the 12oz New York Strip. It is a good meal, but if calories are what you are optimising, the steak wins.

The counterintuitive one: the 12oz New York Strip is 520 calories. That is fewer than the grilled salmon, fewer than smothered chicken, and fewer than Chicken Critters at 620. A large lean cut of beef can be lighter than almost anything breaded.

Where the Calories Actually Come From

Most people focus on picking the right entrée and then hand back several hundred calories elsewhere without noticing.

  • Combos double everything. Ribeye & Ribs is 1,490. The ribeye alone is 680. Adding a second protein roughly doubles the plate.
  • Family Sized items are shareable portions. Family Sized Ribs at 4,020 calories is built for four or five people, not one.
  • The Cactus Blossom is 1,230 calories, more than most entrées on the menu, before your food arrives.
  • Rolls are free and unlimited. About 160 calories each with butter. Three of them exceeds a whole sirloin dinner.
  • Drinks add up quietly. A house margarita is 250 and iced tea is 80.

Building a Sensible Plate

The pattern that works is straightforward: pick one thing to spend on. A roll, a side, or a bigger cut. Trying to have all three turns a 420-calorie steak into a 1,400-calorie evening.

  • Lightest full dinner: Hand-Cut Sirloin 6oz at 420, or Grilled BBQ Chicken at 420.
  • Best value steak: the 6oz sirloin at $16.99, cheapest and leanest at once.
  • Feeding a group: Family Sized options work out cheaper per person than ordering individually.
  • Cheapest full meal: Early Dine dinners start around $11.99 and include two sides.
